Product Description Garden Sorrel (Rumex Acetosa) - Garden sorrel is cultivated variety with clear green leaves. This variety, Sorrel Green de Belleville, is slower bolting than the wild species. The slightly acid tang of the young succulent leaves gives zest to salads. Garden sorrel herb can be cooked as spinach and makes a nice soup. It is also believed to have medicinal value and used to treat several ailments. Sorrel is propagated from herb seeds, usually sown in March or April, though it may be sown in any of the spring months. Sow sorrel herb seeds moderately thin, in drills 6 inches apart, and thin out when the plants are 1 or 2 inches high. When the stalks run up in July, they should be cut back. The roots will then put out new leaves, which will be tender and better for kitchen use than the older leaves, so that by cutting down the shoots of some plants at different times, there will always be a supply of young leaves. Remove flowering tops of sorrel to keep the leaves tender.
