Because of the production demands and limited nature of this item, the supply of jar colors varies but will always be from the pallet of three earth tones, brick, white, or yellow, as seen in the photo. The oil is naturally unfiltered and may show some sedimentation, as with other fine oil and wine products. During the colder months, olive oil will congeal during shipping. This is normal, natural, and will not disturb the quality of the oil. Please allow congealed oil to rest at room temperature for 24 hours.
